• 1 ¼ cups whole wheat flour
  • ½ cup rolled oats
  • ½ tsp. salt
  • 2 teaspoons baking powder
  • 1 ripe banana, mashed
  • 1/3 cup extra virgin olive oil
  • ½ cup Golden Harvest honey
  • 1 large egg
  • 1/3 cup milk
  • 1 tsp. pure vanilla extract
  • ½ cup Greek yogurt
  • 1 cup fresh or frozen mixed berries


In a large bowl, stir together flour, oats, salt and baking powder.  Set aside.  In a separate bowl, whisk together mashed banana, olive oil, Golden Harvest honey, egg, milk and vanilla.  Pour over flour mixture and stir until just combined.  Stir in yogurt.  Let rest for 5 to 10 minutes to allow the whole wheat flour to soak up the liquids.  Gently stir in the berries.  Spoon evenly into muffin cups lightly coated with non-stick cooking spray.  Bake at 400°F for 20 to 25 minutes or until a toothpick inserted in the center comes out clean.  Allow to cool for several minutes before removing and cooling completely on wire rack.
